My kids absolutely love this recipe. The apples give it a sweet flavor, which makes getting cabbage into their diets super easy.
APPLE CABBAGE SLAW
RECIPE INFO:
PREP TIME: 15 minutes
YIELD: 10 servings
INGREDIENTS:
1 head red cabbage cored and finely chopped
2 apples cored and finely chopped
2 scallions finely chopped
1 small onion finely chopped
2 tbsp. lime juice (one fresh squeezed lime)
1/3 cup apple cider vinegar
¼ cup coconut oil
1 tbsp. honey (optional)
2 tsp. Dijon mustard
Sea salt to taste
METHOD:
1. Chop up the cabbage, apples, scallions, and onion and put into a large mixing bowl.
2. In another bowl, combine the lime juice, apple cider vinegar, coconut oil, honey, mustard, and salt and whisk thoroughly.
3. Add the dressing to the cabbage mix and combine well.
4. Serve over a bed of greens or enjoy as is.
